This is one of my new favorite meal prep recipes to make! If you follow me on Snapchat, then you may have seen an informal recipe of this crockpot mexican shredded chicken dish, but here’s another look at the ingredients I used! This was SO delicious, so moist, and full of flavor — super pleased with how it turned out. Â I put it in wraps with pico de gallo, black beans, low fat shredded cheese, a dollop of plain greek yogurt, and diced avocado. I also put it on top of a salad to make a taco salad. Â I even made a quesadilla by just sticking it on a panini maker or in a skillet to brown everything!
Ingredients:
2 pounds of boneless chicken breasts {raw}
1 large jar of salsa {any type of salsa you like! don’t be afraid to put too much because it gives it a lot of flavor}
Salt, pepper, and garlic powder to taste {I put a lot of garlic powder}
4 tbsp taco seasoning {easy on the salt if your taco seasoning is salty!}
1 small can of diced green chiles {optional — I did this for extra heat!}
4 tbsp of liquid smoke {also don’t be afraid of putting too much — the smoky flavor tastes perfect!}

There’s not a day that goes by when I don’t feel so blessed to be Jordan’s wife. He is my everything. These photos and video are the sweetest reminder of our love for one another. It’s crazy what can happen in a year. I met the love of my life and the rest is history. I was having a hard time ending this post, because frankly, I think I could talk about that evening forever. Then I realized that this post doesn’t have an ending, but instead, a beginning. Thank you so much for all of the love, excitement, and gratitude.
One of my favorite things to do in the fall is bake my dark chocolate chip pumpkin bread! I’ve made it *so* many times for me, J, and friends & family. It’s moist, decadent, and super easy to make! It also makes for a great DIY housewarming gift.
