This chicken broccoli quinoa casserole is one of my fave dishes to make when I meal prep! It’s super easy & delicious — and of course, full of nutritional ingredients to help fuel your body and keep you staying energized, as well as satiated.
Ingredients:
2 pounds of chicken {raw}
1.5 cups of greek yogurt {I use fage 0%}
2 cups of chicken broth
1/2 cup of reduced fat shredded mozzarella cheese
2 cups of cooked quinoa
1 jar of roasted red peppers {I used a 12 oz jar}
3 cups of broccoli, chopped
1/2 cup of white onion, diced
1/2 cup of panko bread crumbs
2 tbsp italian seasoning
1 tbsp oregano
Salt, pepper, garlic powder to taste

This recipe was adapted from Fit Men Cook. I’ve found that boiling the chicken provides better texture — especially when re-heating the meal. I also love adding roasted red peppers to give the dish some spice. Keep in mind, that I used different measurements for some of the ingredients, because I’ve found that it works better for my personal taste.

A pretty large casserole dish! So depending on how much you eat haha, buuuut it should last at least for the weekdays — it’s a good meal prep item!
