This chicken broccoli quinoa casserole is one of my fave dishes to make when I meal prep! It’s super easy & delicious — and of course, full of nutritional ingredients to help fuel your body and keep you staying energized, as well as satiated.

Ingredients:

2 pounds of chicken {raw}

1.5 cups of greek yogurt {I use fage 0%}

2 cups of chicken broth

1/2 cup of reduced fat shredded mozzarella cheese

2 cups of cooked quinoa

1 jar of roasted red peppers {I used a 12 oz jar}

3 cups of broccoli, chopped

1/2 cup of white onion, diced

1/2 cup of panko bread crumbs

2 tbsp italian seasoning

1 tbsp oregano

Salt, pepper, garlic powder to taste

Directions:

  1. Boil chicken breasts until done.  Once completed, remove cooked chicken breasts from pot and shred them using 2 forks.
  2. Steam broccoli and onions, using rice cooker or over the stove.
  3. In a blender, pulse greek yogurt and roasted red peppers until smooth.
  4. Mix chicken, broccoli, onions, greek yogurt/roasted red peppers mixture, seasonings, quinoa, and 1/2 of the chicken broth in a bowl.
  5. Spray a large baking dish with coconut oil spray or another type of non-stick spray.
  6. Place mixture in the large baking dish.
  7. Top with panko bread crumbs, mozzarella cheese, and the other 1/2 of the chicken broth {this keeps the dish moist}.
  8. Stick in the oven for 20-25 minutes at 350 degrees.

Let me know if you end up trying this yummy chicken broccoli quinoa casserole {with roasted red peppers}!  It’s an easy dish to meal prep and the peppers give it a nice little kick!

Have a great Saturday!

This recipe was adapted from Fit Men Cook. I’ve found that boiling the chicken provides better texture — especially when re-heating the meal.  I also love adding roasted red peppers to give the dish some spice.  Keep in mind, that I used different measurements for some of the ingredients, because I’ve found that it works better for my personal taste.

    How many servings does this make?

    • A pretty large casserole dish! So depending on how much you eat haha, buuuut it should last at least for the weekdays — it’s a good meal prep item!

  3. Valerie says:

    How do you measure this so you can add it to MyFitness pal and account for the macros?

  4. Rachel says:

    Made this tonight and it did not disappoint!

10/27/18 Mr. & Mrs. White

There’s not a day that goes by when I don’t feel so blessed to be Jordan’s wife. He is my everything. These photos and video are the sweetest reminder of our love for one another. So, grab a cup of coffee, pull up a seat, and try not to bawl your eyes out (because I know we did). Every time we look through our photos and watch our video, we cry the happiest tears.

The Proposal

It’s crazy what can happen in a year. I met the love of my life and the rest is history. I was having a hard time ending this post, because frankly, I think I could talk about that evening forever. Then I realized that this post doesn’t have an ending, but instead, a beginning. Thank you so much for all of the love, excitement, and gratitude.
