This honey mustard chicken chopped salad is one of my favorite meals to make for lunch or dinner! I’ll ‘meal prep’ the chicken by cooking 5-7 breasts at one time. Â I’ll chop all the lettuce, tomatoes, and onions for the week and keep them stored in separate containers. Â Then, I’ll throw everything together when I’m ready to eat it. Â Super healthy and delicious!
Chicken marinade (for 5 large breasts):
1 tbsp garlic powder
1/3 cup rice vinegar
1 tsp ground mustard
1 tbsp honey
1 tbsp dijon
1 tsp paprika
1/3 cup of Orange Juice (adds extra sweetness)
1/4 cup EVOO
Sriracha to taste (I did 1 tsp)
Salt and Pepper to taste
I let the chicken sit in the marinade for 24 hours and then I grill them. Â You can also use chicken tenderloins, if that floats your boat.
The salad is pretty basic: lettuce, tomatoes, red onions, feta, and then dressing. Â For dressing, I sometimes use Opa’s Greek Yogurt Ranch Dressing {it’s made with greek yogurt and 10x better for you then regular ranch}. Â However, I’m a sucker for balsamic so most of the time, I just whip up some vinaigrette on my own in a mason jar, using salt, pepper, garlic powder, half EVOO and half lemon juice, and then a splash of balsamic vinegar. If you follow me on Snapchat, then you’ve probably seen me snap this salad before! It’s delish!

There’s not a day that goes by when I don’t feel so blessed to be Jordan’s wife. He is my everything. These photos and video are the sweetest reminder of our love for one another. It’s crazy what can happen in a year. I met the love of my life and the rest is history. I was having a hard time ending this post, because frankly, I think I could talk about that evening forever. Then I realized that this post doesn’t have an ending, but instead, a beginning. Thank you so much for all of the love, excitement, and gratitude.
One of my favorite things to do in the fall is bake my dark chocolate chip pumpkin bread! I’ve made it *so* many times for me, J, and friends & family. It’s moist, decadent, and super easy to make! It also makes for a great DIY housewarming gift.
