Healthy Apple Cider Donuts

The weather has cooled down, the fire is going, and the leaves are starting to fall! I can’t believe I’m saying this, but it looks like Fall 2020 is here to stay.  I’m no stranger to fall activities — in fact, I have a full fall itinerary that is *very* serious amongst our friends.  I think I might have to just put this on the fall itinerary, because this recipe is just too good not to share with others.

In case you couldn’t tell, I’m a sucker for yummy pumpkin and apple cider treats! The other evening, J and I had spent some time by the fire pit then started watching the Yankees game.  I lit some of my favorite fall candle and was itching to bake something yummy. I had just picked up some apple cider from the grocery, so it was the perfect time to put it to good use. I decided to whip up these healthy apple cider donuts that are light, fluffy, and delicious.  Oh, and did I mention they’re also gluten free?! Give this recipe a go — and then save one for me!

Just look at that yummy cinnamon sugary topping (coconut sugar, of course!)

INGREDIENTS:

DIRECTIONS:

  1. In a large mixing bowl, mix together all ingredients (except for the glaze) until there are no lumps.
  2. Using a nonstick donut pan, place batter accordingly.
  3. Bake at 350 for 10-15 minutes or until golden.
  4. Mix together the glaze ingredients.
  5. Remove donuts from pan and coat the top of the donut with the glaze.
  6. Serve!

There’s not a day that goes by when I don’t feel so blessed to be Jordan’s wife. He is my everything. These photos and video are the sweetest reminder of our love for one another.
