It seems like whenever I want to get in ‘comfortable’ clothes, I always put on workout clothes, like this polka dot activewear.  Anyone who’s around me knows that I am notorious for wearing workout clothes even if I’m not working out.  There are some days where I just don’t feel like getting dressed up {especially if I’m running errands}, so I’ll throw on some shorts, a top, my go-to tote that fits everything I need, and of course, minimal makeup.

I’ve been receiving some questions about my ‘diet’ and ‘nutrition’, so I thought I would go ahead and share kind of what I eat, how I eat, and when I eat.  I usually meal prep on Sundays or Mondays for the whole week. I’ll make about five lunches and five dinners, as well as make sure I’ve got some chopped veggies, yogurt, granola, etc. for snacks.  My meals usually consist of a healthy grain {almost always quinoa}, veggies, and some type of protein {usually chicken or ground turkey}.  Sometimes, I’ll want salads for the week, so I’ll chop enough lettuce, tomatoes, onions, etc. to last me the week and make them as I go, and also go ahead and have all the meat cooked so that I don’t have to do it every night. For breakfast, I usually eat one scrambled egg and a piece of toast OR I’ll make some healthy quinoa fruit muffins that are easy to just grab and go if I’m in a rush. I also usually eat healthy snacks in between the meals.  However, it’s a bit hard to do that when you’re busy and on the go.

I also definitely do not strictly eat the meals I make {and ‘eat clean’}.  This isn’t some inspiring post about how you should eat clean and blah blah blah, because ain’t nobody got time for that.  I do meal prep for the week so that I can have healthy meals readily available for me.  That way, I always have a meal to eat and never pig out when I’m hungry because I missed lunch or something.  However, on the weekends, I usually grab drinks or dinner with friends or Andrew.  I behave during the week so that on the weekends, I can say ‘yes’ to wine or say ‘yes’ to some yummy BBQ or say ‘yes’ to a cookie.  When I make a conscious decision to eat unhealthy for a meal, then I don’t feel guilty about it.  I control the food, not the other way around.

It’s also all about balance {bet you’ve never heard that one before, huh?}, not just with food in moderation but also the type of food you eat.  For example, if I grab brunch, it’s a bit hard to eat healthy at a restaurant for that meal, unless you want some boring oatmeal {let’s be real}.  If I’m craving some pancakes, then I’m going to get those dang pancakes.  Do I have to eat the whole stack? No. I’ll just tone the carbs down for my meal for lunch.  I already had enough carbs in the morning and am also probably still full, so I’ll eat maybe a small salad with lean protein for lunch.  See where I’m going with this? Balance. Give a little, take a little.

    I love quinoa! I make an “enchilada” quinoa casserole sometimes -it’s just cooked quinoa, corn, black beans, enchilada sauce and green chiles, put in the oven for 15 minutes! What is your quinoa muffin recipe if you don’t mind me asking?
